Shang is my second most played and For most of your questions, all I can really say is spend more practicing and playing around with the timing of shang's juggles eventually they'll just click. But a here are a few tips. The ninja variation is probably the most viable but also probably the most predictable because it's everyone's favorite.

Both MK9 and MK11 absolutely nailed shang tsung, both are so different in attitude yet so fitting of a soul stealing sorcerer. It's hard to find any flaws with either of the two. I like all 4. For some reason, they love revamping character designs and then pretending that the character has always looked like that.Explosive corpses, shake and slide seems pretty good as well. I usually use slide, lift, and shake. Ground eruption is great but I like to keep shang closer for pressure. It depends on how you like to play.
