For me, I wouldn't take anything less than these mid range steels with heat treating done well, Nitro-V, S35vn, S45vn, D2, CPM-D2. Spyderco's Spy27 also performs really well, I would say it's better than S30v from my real world cutting experience. My M390 (Benchmade) didn't perform too well, not until I put a second edge (1200 grit, ceramic) on it.
